Guanciale Teso

This pork cheek with black pepper is known as “guanciale teso” due to its flat shape. This cut is obtained from the cheek and part of the neck of the pig. On first sight you might confuse this product with pancetta, which is in fact made from the meat and fat on the belly of the pig.
Pork cheek has a high fat content, sometimes in excess of 70%. For this reason it’s often used in some of the signature dishes of Central Italy, such as Carbonara or Amatriciana.
Made from pork cheek with rind, matured for 30-60 days.
Gluten and lactose free.

PAIRINGS 
Recommended pairing: a fresh, fruity, young red wine, maybe even sparkling if you fancy it. Ideal options might include Merlot Friuli-Grave, Lambrusco di Sorbara or Chianti di Moltalbano.

COLOUR: Rosy colour when sliced

AROMA: Aromatic 

FLAVOUR: Pleasant, typical of the charcuterie tradition of Le Marche

HOW TO STORE: Vacuum packaged products must be stored at a maximum of + 4°C, whereas whole hams must be stored in a cool and dry place at no more than 15°.

PACK SIZE: The weight of the whole product is about 1,300-1,800 Kg. The product is sold vacuum packaged, also sliced.
